Banana Choc Chip Pancakes with Coco-Peanut Sauce

Since my move to Vietnam (with all its fabulous food), I still occasionally crave some of the more familiar comfort foods, mainly chocolate and peanut butter!

They are both available ingredients here, although weather conditions in Vietnam can make chocolate quite difficult to work with because it instantly melts on any skin contact! However, getting covered in melted chocolate is a sacrifice I’ve been prepared to make in the name of food and recipe research…

On that note, I’m now ready to share this recipe for a stack of banana-ry, chocolatey, peanutty, coconutty (ok, you get the idea!) pancakes and not only are they vegan, but you can make them gluten-free too!

So, for a gluten-free version, just use the exact same quantity of oat flour instead of plain flour and they will work perfectly well – the pictures are of the gluten-free version just for proof!

Recipe – Banana Choc Chip Pancakes with Coco-Peanut Sauce
Makes 6 pancakes (serves 2 or 1 greedy person)

Ingredients
Pancake Mix
2 medium/small bananas
2 tsp coconut oil – plus extra for frying (other oils will also work)
175ml plant-based milk
2 tsp sugar (or more if you like them sweeter)
120g plain flour (or you can use oat flour for GF)
1 tsp baking powder
Pinch of salt
1-2 tbsp chocolate chips
Optional: 1 tbsp chia seeds (for health benefits)
Topping
1 tbsp peanut butter
100ml coconut cream
Handful of roasted peanuts

Method
1. Begin by melting the peanut butter and the coconut cream together in a small saucepan on a low heat
2. Once the two have incorporated and the mix turns a deeper brown colour take off the heat and add sugar to taste, set aside until serving
3. Mash the bananas in a mixing bowl, then mix in the oil, the sugar and the plant-based milk
4. Combine the flour, baking powder, salt and then mix into the wet ingredients
5. Stir in the chocolate chips and chia seeds if using
6. Stick a frying pan with a splash of oil on a high heat
7. Once the pan is hot spoon a 6th of the mix in to the pan and push the mix down on the pan to form a circle
8. Let it fry for a few minutes until you start to see bubbles forming on the top
9. Flip the pancake and cook on the other side, the outside should be a nice golden brown with fluffy insides
10. Stick the cooked pancakes in the oven on a low heat to keep them warm and repeat the process until all the mix is finished
12. Stack the pancakes, spoon on the sauce and sprinkle with peanuts
13. Enjoy!
